Curry Poulet Creole Style Tizan

1.5 pounds of Chicken breast cut into 1 inch x 1 inch size
2 medium red onions chopped
4 medium size red potatoes (1 pound approx)
5 medium tomatoes chopped
1/2 cup of apple cider vinegar (replace with 3 tablespoon of tamarind paste if you have)
2 tablespoon of garlic paste
2 tablespoon of ginger paste
1 bunch (handful) of fresh cilantro
2 tablespoon of garam masala
2 tablespoon of curry powder (Masala grandmere or something equivalent)
1 tablespoon of paprika
1 tablespoon of turmeric
1/2 teaspoon of chinese five-spice
2 tablespoon of red chile powder (the good stuff from Chimayo if you can have it)
5 tablespoon of vegetable oil
2 to 5 tablespoon of tomato paste (according to taste)
1 can of chicken broth and 1/2 cup of water
21 spice blend (not necessary)
1 tablespoon of brown sugar (from Mauritius of course...otherwise whatever)

Fry the onions and add the tomatoes to fry a bit in half of the oil , onion and tomato should be just cooked to remove the raw taste(add a little salt if you like..I tend to be use salt sparingly) . Put tomato and onion in a blender add the vinegar, garlic, ginger , cilantro, garam masala, curry powder, paprika, turmeric, fivespice, red chile powder (if you use tamarind paste add some water to help blending)...blend the whole thing so that it is smooth

cut the potatoes in 1 inch by 1 inch cubes then microwave them for 6 to 8 minutes so that they are semi hard (do not soften the in the microwave).

Fry the chicken in the remainder of the oil for 3 to 4 minutes ..add some 21 spice powder (that you get in super markets) for flavoring the chicken ...you may add some salt for the chicken to your own taste.. Fry till the chicken the outer surface is whitened. Remove chicken pour the blender paste in the same pan and let it stir fry for 4 minutes or so then add potato and chicken, mix thoroughly. Add chicken broth and water just to cover the solid food, add brown sugar...cover and let simmer for 30 minutes...stir regularly.

Eat with some sauteed veggies and a little bit of rice or farata and accompanied by some "Green Island" white rum on ice and a dash of lime juice !
